Ingredients:
4-6 Granny Smith apples, peeled and cored
1/2 cup ricotta cheese
1/2 cup raisins (found in dried fruit section of supermarkets)
1 tbs rum or brandy
1/2 tsp Ground Cinnamon
1/2 cup brown sugar
1 tsp Spice
50g butter
1 1/2 cups water
Directions:
Pre-heat oven to 180C.
1. Place the prepared apples into an ovenproof baking dish.
2. Fill the centres with combined ricotta cheese, raisins, rum and Ground Cinnamon.
3. Blend the brown sugar and Spice together with the butter and water in a small saucepan and bring to the boil.
4. Pour mixture over the apples and cover. Bake in the preheated oven for 1 1/4 hours basting frequently. Serve warm with heavy cream, custard or vanilla ice cream.
