Tenderized venison is rolled with bacon, cream cheese and jalapeno peppers for these tasty grilled treats.
Ingredients:
• 1 pound tenderized venison steak
• 1 pound of bacon
• 3 ounces of cream cheese
• 1 jar jalapeno peppers (you'll only use 1 slice of jalapeno per bite)

Method:
Light your BBQ grill. While you're waiting for your coals to turn ashy, cut your venison into bite size pieces. Cut bacon slices crosswise into 2 or 3 pieces per slice. Lay the bacon pieces out and place a piece of venison on one end of each slice. Top the venison with a dab of cream cheese, then with a jalapeno pepper slice. Tightly roll each slice of bacon to the end, starting with the end with the venison. Thread onto skewers, leaving about 1" between each "bite". After all skewers are prepared, place on the grill. Turn often, watching carefully so the bacon does not catch fire. When all sides of the bacon are crispy, remove from grill. Serving size is 3 bites, and servings depend on how many slices were cut of the bacon.
Notes:
These can also be cooked on a gas grill, or in the broiler. You can also replace the venison with duck, pork or chicken.
