Beaten Biscuit


beaten biscuitsIngredients:
3 pints pastry flour
1 teaspoon salt
1 cup lard
Milk

Instructions:
To prepare this Beaten Biscuit Recipe, first mix and sift flour and salt; cut and rub the lard into the flour. Make a stiff dough with milk or milk and water; knead and beat with rolling pin or mallet for one hour. The dough should be smooth and glossy, bits should break off with a snap.
Shape in thin flat cakes, prick all over with a sharp fork and bake in a moderate oven to a delicate brown, until the edges crack a little. They must have time enough to bake thoroughly or they will be heavy in the middle.
