Ingredients:
• One skinless, boneless chicken breast
• 1 day-old dinner roll (crumbled)
• 1/4 tsp salt
• 10 to 12 turns of cracked pepper
• 1 tbsp freeze-dried chives
• 1 tbsp dried parsley
• 1/2 tsp chili powder
• 1 egg white
• 3 tbsp extra virgin olive oil
• 1/2 cup Cattlemen's BBQ sauce
• 1 tsp Buffalo chipotle Mexican hot sauce
Method:
Preheat oven to 375F. Combine dinner roll crumbs, salt, pepper, chives, parsley and chili powder in a tray. Whisk egg white and olive oil together. Cut chicken breast into strips. Roll strips in egg white/oil combo then roll them around in the breading mix. Place strips on baking sheet. Bake 12 to 15 minutes. Combine BBQ sauce and chipotle to use as the dipping sauce.
