Fruit Parfait


fruit parfaitIngredients:
1/2 cup blueberries
1 pkg. gelatin, any flavor
1/2 cup cold water (ice cubes)
Mint leaves (optional)
1/2 cup sliced strawberries
3/4 cup boiling water
3/4 cup thawed whipped topping

Preparation:
Divide fruit among 6 parfait glasses. Dissolve gelatin in boiling water. Combine cold water and ice cubes to make 1 1/4 cups. Add to gelatin, stirring until slightly thickened. Remove any unmelted ice. Measure 3/4 cup gelatin, pour over fruit in glasses. Chill until set, but not firm.

Fold whipped topping into remaining gelatin. Spoon into glasses. Chill until set, about 1 hour. Garnish with additional fruit and mint leaves, if desired. Makes 6 (1/2 cup) servings. Preparation time: 20 minutes. Chill time: 1 hour. About 40 calories per serving.
