Goat cheese, cream cheese, pistachios, pimento, basil, and garlic are combined and served with pita wedges or crackers.
Ingredients:
• 1 cup goat cheese
• 1 8 oz. plus 1 3 oz. pkg. cream cheese, softened
• 1/4 to 1/2 cup chopped pistachio nuts
• 1 Tbsp drained, diced pimiento (from a jar)
• 1/2 tsp dried basil, crushed
• 1 small clove garlic, crushed
• Dash of salt, to taste
Method:
Combine cheeses in a food processor. Add remaining ingredients and pulse several times. Refrigerate at least 2 hours for flavors to blend.
Notes:
Serve in a bowl or roll into a log after refrigerating, and coat with minced parsley. Serve with toasted pita wedges and/or whole wheat crackers.
Number of servings: 6-8 as appetizer
