Mediterranean salad


mediterranean saladIngredients:
8 medium-sized red potatoes (about 1-1/2 pounds), cooked
1/2 cup bottled oil and vinegar or vinaigrette salad dressing
1/2 cup pitted small black olives (about 20)
1 cup sliced cucumber
1/2 cup paper-thin red onion rings
1/4 cup roasted red peppers in thin strips
5 thin slices Prosciutto di Parma (about 2-1/2 ounces) cut in 1/2 inch strips
1/2 cup mozzarella cheese cut in cubes (about 2 ounces)

Preparation:
Cut potatoes in 1/4-inch thick slices (makes about 4-1/2 cups). In a large bowl
combine potatoes and about 3 tablespoons dressing; toss gently. Add olives, cucumber, onion, peppers, Prosciutto di Parma and remaining dressing; toss gently. Top with cheese. Serve on lettuce leaves, if desired.

Makes 4 portions.
