Ingredients:
8 ounces fresh white mushrooms
1/2 cup finely diced celery
1/2 cup shaved or crumbled Parmesan cheese, (about 1 ounce)
1/4 cup fresh lemon juice
1/4 cup extra virgin olive oil
1/4 teaspoon salt
Dash ground black pepper
12 thin slices Prosciutto di Parma (about 6 ounces)
Preparation:
Slice mushrooms as thin as possible (makes about 3 cups); transfer to a medium-sized bowl. Add the celery, Parmesan cheese, lemon juice, olive oil, and salt and pepper; mix gently. On each serving plate, place two slices of Prosciutto di Parma; spoon mushroom mixture on top.
Makes 6 portions.
