Pine Nut Paprika Crackers


Ingredients:

• 1 1/2 cups all-purpose flour
• 1/4 cup cornmeal
• 1 cup ground toasted pine nuts
• 1/2 tsp. salt
• 2 tsp. sugar
• 1 tsp. paprika
• 1/3 cup butter, softened
• 3 tbsp. water

Method:

In a medium bowl combine the flour, cornmeal, ground pine nuts, salt, sugar, and paprika until combined. Using your fingers, work the butter into the flour mixture until combined. Add the water; mix well, pressing the dough with your hands to form a ball (adjust water amount if needed). Cover dough and refrigerate about 1 hour or until firm. Pinch off 1-inch pieces of the dough and roll each into a ball. Place on greased baking sheets. Press with a flat-bottomed glass into 2-inch rounds. Bake in a 350 degree oven about 10 minutes or until edges are brown.

Number of servings: about 2 1/2 dczen crackers
