• 2 cans refrigerated croissant roll dough
• 1 pkg frozen, chopped spinach, thawed and squeezed of excess moisture
• 1 large pkg shredded cheddar or mozzarella cheese, you choose
• 1 pint (15 oz.) ricotta cheese
• 1 lb uncooked turkey sausage
Method:
Preheat oven to 400 degrees. Cook sausage; drain, set aside in large bowl. Add ricotta cheese, spinach, and either cheddar or mozzarella cheese. Separate each can of dough into triangles, then cut each triangles in half lengthwise, to make two triangles from each section. Spoon a bit of the filling mixture into dough and fold them up by the corners, pinching together at top. Bake at 400 degrees according to directions, until golden and puffed.
Notes:
These are wonderful as snacks or as appetizers. They are not messy to eat, and travel well. You can also brush some egg yolk on them before baking to give a golden gloss, if you choose.
